Quick and Easy Banana Pancakes

Pancake Day Recipe
This recipe is so quick and easy and a great alternative for a healthy pancake for Pancake Day.
All you will need for this recipe is
1 egg
1 banana
Coconut oil
All you need to do it mash the banana in a bowl and then mix in the egg.
Add the coconut oil to the frying pan to heat up.
Pour some of the mixture into the frying pan just enough for a mini size pancake.
Keep on medium heat and cook 2 minutes each side.
You can add some toppings or sides to these. I had strawberries with mine and they were so delicious.
I would give this recipe a 9/10 and would definitely recommend it for this Pancake Day which is Tuesday 28th February.
Let me know if you give these a try and also if you have any different pancake recipes.

Living Arrows | Muddy Puddles | 20th February 2017

Living Arrows | 20th February 2017

Sonny and I had such a lovely weekend. On Sunday we popped to Heaven’s Gate and had a little adventure. Sonny loved running around and splashing in the puddles.
It’s a nice open space where he can be let loose and I don’t have to worry about him.
I love his cute granddad cap which I got from Matalan and his cute rucksack he got for Christmas which had his drink and snacks in.
What made me laugh is when we stopped for snacks he didn’t eat all of his chocolate buttons, he just wanted to get back up and do some more walking, running and exploring.
It’s the first time we have been out and had fun in muddy puddles. It’s safe to say this is one of his new things to do. He would sit in them if I would let him.
Sonny is looking so grown up in these photos and becoming such a handsome little boy.
I took so many photos and they all came out really nice. Here are a few for the Living Arrows link this week.

Valentine's Day

Valentine’s Day

Nothing will beat last year with the engagement proposal.
This year was completely different as Valentine’s Day was on a Tuesday and we were both at work all day while Sonny was at his Nanny’s for the day.

I still wanted to do something special even if it wasn’t much.  I popped to Tesco in my lunch break to look for a gift for Darren but there is nothing to get him unless it’s chocolate so decided against a gift.

I decided just a nice quick meal on the night would do the job. A special meal but one I could just chuck in the oven. It was to avoid ordering an expensive unhealthy takeaway.  Tesco were doing a meal deal on their special range. See below the deal and the meals I selected. There were lots of choices to pick from.

1 Main, Lemon and herb chicken
1 Side, Lemon and thyme roast potatoes

1 Desert, Chocolate Truffle and champagne profiteroles

1 Drink, A bottle of white wine

ALL FOR £10, I saved in total £8.60 it was such a good deal. I know a lot of the shops are offering deals like these on Valentine’s Day nowadays.

I also got 2 love themed cupcakes from work with a donation to the Alzheimer’s charity for £1. Just a little gift for Darren and Sonny.  Sonny loves cakes at the moment so perfect little gift for my little boy.

I also got Sonny a valentine’s themed helium balloon which he also loved and kisses and cuddles it as it has teddy bears on it.

Darren spoilt me and got me some pearl earrings and pearl bracelet to wear on our wedding day.  I got a card from Darren and also from Sonny. It is so cute getting a card from my baby boy.

Darren went to the gym till about 7pm then we sat and had out nice meal and that was all we done to celebrate this year.

Its mad to think I will be Darren’s wife next Valentine’s Day.
What did you get up to this Valentine’s Day? Hope you all had a LOVEly time.

It’s so sh*t being a full time working Mummy

Just got back to work after my lunch break and I am realising even more how shit it is being a full time working mum. I had a 45 minutes lunch break which I drove home and cleaned the kitchen top to bottom (didn’t have time for floor). I run round like a crazy women trying to get things done in my lunch breaks as it’s the only way to get everything done.

I work 5 days a week 8 till 4.30pm but by the time I collect Sonny from childcare or his nanny’s house I sometimes don’t get home till 6pm. Sonny usually has bedtime milk at 6pm so its PJs milk and ‘In the night garden’ then bed. No time for fun or to spend time with my little monkey.

Sonny is 19 months old and I have been doing this since he was 9 months old. I have missed out on so much of his growing up, I hate that. Before I know it he will be starting school.
When I returned back to work after maternity leave I wanted to return part time but that wasn’t an option and my company only offered full time. My whole maternity leave I had it in my head I would be a part time working mum, this didn’t go to plan and it was hard and still is.
The reason I went back to the same company was because although I didn’t want full time I like my job and the people I work with and I am lucky to have that. The wage isn’t that bad neither for my area where I live. I said I would give it a try and I have just got on with it.

Some mornings I have to wake Sonny up and take him out in this icy cold weather. I feel so bad. He is so used to it now though and he just gets on with it. I am so lucky to have a happy little boy.

One of the problems with this working all the time is I just want to spend all weekend long with my boy as it’s my only two days I get with him. This means I avoid invitations out with friends and even date nights with Darren as it would usually mean Sonny sleeping somewhere else for the night and not being with me first thing the next morning. Some friends have got distant but my closest are still about as they have children and understand. It’s also the same for family. I used to see my sister most weekends but I am lucky if I even see her once a month now. I just don’t have time to fit everyone in and get everything done at the weekends.

My house is always a mess and I can’t keep on top of the house work. Tempted to get a cleaner but just can’t justify wasting the money on one. I get so stressed with all the mess in the house. Spending time with Sonny comes before cleaning and tidying the house and it will always be that way.
The benefits are Sonny is very independent and never gets upset when I drop him off in the mornings. He loves nursery and going to his nanny’s. His development is coming along quicker from nursery I have noticed. He is a very sociable little boy and it’s so lovely to see that when I am out and about with him.
The main thing is that Sonny is happy, which I can see he totally is. Otherwise I wouldn’t be doing any of this.

Things need to change in the next year though and if I can’t go part time in the future it would mean leaving my current job, this would be sad as I have worked here for 11 years now and it would feel strange working somewhere else.

Do you work full time as a mummy? How do you feel working and being a mummy? Any advice? Please comment below.

Slow Cooker Butternut Squash & Red Pepper Soup | RECIPE OF THE MONTH

This is a great recipe for busy working mums but of course for anybody. I literally just stuck all the ingredients in the slow cooker and set it to low all day. Once I got home I liquidized everything together and I had my soup. It’s as easy as that.
I think the hardest part was trying to cut up the butternut squash which in the end I made Darren do. If anybody has any advice on an easy way of cutting one of this please comment below and let me know. You could always buy some that’s already been cut up in the shop to make things easier.

1 Butternut squash
1 Large red pepper
2 Small onions
1 Potato
Smoked paprika 3 tsps
3 Cloves of garlic
1.5 Pint of vegetable stock
Salt and pepper to season

I actually got everything chopped and ready to go the night before. The next morning I just added the stock to the pot and put it on ready to go.
This is a healthy recipe which is slimming world friendly.

Any left overs can go in the fridge ready for the next day.

I served mine up with fresh seeded bread and butter. Yummy.

Darren scored this 8/10. I liked it but it was a bit spicy so I would prob put less paprika in next time.

Let me know if you try this recipe and if you enjoyed it. Anybody who has any other slow cooker recipes they would like to share please link below. I am always looking for new ideas.
